Hermitage Hotel’s Capitol Grille Recreating History



NASHVILLE, TN, June 10, 2005 - For some, the meal will present a blast from the past; for others, it will offer a glimpse into the future. For Sean Brock, the nationally recognized chef at The Capitol Grille, it’s an opportunity to deliver a culinary experience that spans more than 60 years.

From August 8 to October 1, the restaurant, housed in the historic Hermitage Hotel, will recreate a 10-course menu from 1941 and do so by using the latest in gastronomic technology.

The dishes come straight from a summer 1941 “Hermitage Grill” menu, found recently in the hotel’s archives, and while 10 courses sounds extensive, each course will consist only of about three bites.

“This food will be completely different from anything anyone has ever seen,” says Brock, who has developed a reputation for utilizing inventive techniques in his kitchen, including those that use liquid nitrogen, centrifuges and immersion circulators. “There are very few kitchens in America that have this equipment, so the meal will be unique to the country, not just to Nashville.”

The 1941 tasting menu will cost $65 per person, plus tax and gratuity. Wine pairings will be offered at an additional cost. For reservations at The Capitol Grille, call (615) 345-7116.

  • Tomato Juice Cocktail
  • Eggs Stuffed with Caviar
  • Green Pea Soup
  • Celery Stuffed with Roquefort Cheese
  • Hermitage Salad (lettuce, pineapple, cream cheese, green peppers and jelly)
  • Fried Shrimp, Tartare Sauce
  • Filet of Bass, Saute Meuniere
  • Filet Mignon a la Stanley

  • Chocolate Eclair

In 1941:

  • W47NV begins operations in Nashville, Tennessee becoming the first FM radio station.

  • US President Franklin Delano Roosevelt signs a bill establishing the fourth Thursday in November as Thanksgiving Day in the United States
