Admired for his acumen as a Michelin-starred chef operating 40 acclaimed restaurants around the globe, Jean-Georges has made his culinary home in the American South at The Hermitage Hotel with two extraordinary restaurants, Drusie & Darr and The Pink Hermit.
With a globally inspired menu showcasing the abundance of Tennessee produce, Drusie & Darr offers Jean-Georges’ signature plant-based offerings, oven-fired pizzas and crafted cocktails, alongside new creations that reflect the modern spirit of Nashville. The setting is a glamorous modern dining room with uplit vaulted ceilings and a warm, convivial atmosphere that welcomes both special occasions and casual evenings out.

Setting the stage for Jean-George’s cuisine, The Hermitage Hotel’s storied dining room has undergone a contemporary reimagination from visionary designer Thomas Juul-Hansen. Drusie & Darr is a glamorous, yet understated space with timeless warmth and ambiance, utilizing a simple palette of natural materials like metal, wood, leather and stone. All furnishings, from the mother-of-pearl pendant lamps to the seating, tables and curved banquettes, are entirely bespoke to Drusie & Darr, while the iconic arched ceiling is highlighted by dramatic lighting from the world-renowned Hervé Descottes of L’Observatoire International.
Serving as an intimate complement to Drusie & Darr is The Pink Hermit, a chic, light-filled café serving JGV Request coffee and house-baked artisanal pastries in the morning, and a day-into-evening menu featuring a selection of wood-fired pizzas, bruschettas, shareable salads and small plates. Inspired by the stylish neighborhood cafés of Italy and France, evenings at The Pink Hermit begin with Aperitivo Hour with intimate tableside service continuing until 9 p.m.
